Cool the wort, add the juice of lemon and biscuits or yeast. We cover the pan with a lid or we tie gauze and put it in a warm place for 1-3 days. As soon as the contents of the pot are fermented (the indicator is that of the bubbles), separate the pure wort from the oilcake by means of a colander, sieve and clean gauze in several layers. In the process, the liquid is well filtered.

Fill the must in a bottle for about 3/4 of the volume and install a water seal. That is, from the hermetically sealed bottle, a pipe is removed, through which gases formed during fermentation emerge, the end of the tube is placed in a container with water. It is possible to place this structure in the basement or on the veranda, the room should have a positive temperature. At a temperature of 12-18 ° C, wine is emitted for about 40 days. Then it is removed from the sediment, pouring with the help of a tube into clean bottles and stored, clogging up loosely. Hermetically clog the wine can be, when it completely throws (in 2 months, when the bubbles cease to appear). Wine from elderberry can be poured into clean plastic bottles from under the mineral water. Corks are tightened tightly, tightly. Get a sparkling wine. Or you can use glass bottles for this, necessarily insuring the cork with wire braid. It is better to store bottles in a semi-horizontal position.

The elderberry flowers are also suitable for making wine, although of a completely different kind. In this recipe they perform a flavoring function.

Collect the elderberry flowers and rinse them in cold water. Prepare sugar syrup: dissolve 1 kg of sugar in 4 liters of water. We bring the syrup in a saucepan to a boil and boil for 2-3 minutes. Fill with hot syrup flowers, add lemons, cut into slices (remove the bones).

Cool it to room temperature (or a little bit higher) and add the yeast or biscuits. We tighten the pan with gauze and place it in a warm place until the start of confident fermentation (3-5 days).

Fermented wort is filtered through a colander and gauze, squeezed, poured into a bottle. Fill the bottle with a must for 3/4 and install a water seal (see the previous recipe). On average, the wine ferments for a period of about 40 days. The end of the main phase of fermentation can be judged at the end of the exit of the wine bubbles through the water gate. Then you can carefully remove the drink from the sludge, that is, strain it with a tube into a clean container and seal it tightly.

Of course, the wine from the flowers of elderberry in color, taste and aroma is fundamentally different from wine from elderberries.
