Tubes with cream are a real classic of culinary art. We offer you several popular recipes and tell you how to prepare puff pastry with protein cream and make a real Italian dessert.
Puff pastry with protein cream - recipe
Ingredients:
- ready-made puff pastry - 420 g;
- egg - 1 piece;
- Butter - 20 g.
For cream:
- egg whites - 2 pcs .;
- citric acid - a pinch;
- Vanilla - to taste;
- granulated sugar - 110 g;
- water - 55 ml.
Preparation
For the preparation of our layered tubes, we will use ready-made puff frozen dough. Therefore, shortly before cooking, we will take it from the freezer and completely defrost it.
The thawed dough is slightly rolled out with a rolling pin and cut into long strips about two to two and a half centimeters wide. Forms for tubes smeared with butter and wind on them dough spirally and a little overlap. We cover the pan with oil, lay out the obtained blanks on it and determine in a preheated to 185 degrees oven for twenty-five minutes or until the desired degree of rudeness.
While the tubes are baked and cool, we will prepare the protein cream. To do this, heat the water to a boil, pour in the sugar and cook to a temperature of 118 degrees. If you do not have a thermometer, then we check the readiness of the syrup as follows. One drop of it is immersed in cold water, and if a medium-density plastic ball can be formed from it, the syrup is ready. If the drop remains quite liquid, then boil it a little more.
In the meantime, whisk the whites with the addition of citric acid to a thick and thick foam and, without stopping the whipping, pour a thin hot trickle into the ready-made hot syrup. Continue beating until the mass cools.
With a ready-made protein cream, we fill the cooled, layered tubes and serve them to the table.
Italian Cannoli rolls with cream
Ingredients:
For the test:
- wheat flour - 310 g;
- white dry wine - 125 ml;
- olive oil - 35 ml;
- egg of chicken - 1 piece;
- granulated sugar - 35 g;
- ground cinnamon - 1 tsp g;
- cocoa powder - 1 tbsp. a spoon;
- vinegar 9% - 15 ml;
- salt - a pinch;
- vegetable oil for frying - 700 ml;
For filling:
- cream cheese or soft curds - 550 g;
- powdered sugar - 85 g;
- orange liqueur - 55 ml;
- orange and cherry candied fruit - 1 handful.
Preparation
In a deep bowl we combine all the ingredients for the dough, knead them thoroughly, roll them up and lump them in the refrigerator for one hour, covering them with a film.
After the time, we take the dough out of the refrigerator, roll it out in a thin layer and cut it out with a cup or bowls. We wind them on metal molds and immerse them in preheated vegetable oil (fryers). We hold up to a ruddy for about one to two minutes and take it out on a paper towel.
Cream cheese mixed with sugar powder, liqueur and candied fruits and fill the resulting cream with Italian tubes. The real Italian dessert "Cannoli" is ready. Bon Appetit!
