Chuck-chak - recipe

The recipe for the traditional Turkic chak-chak has different variations and names in each of the regions. But in general, this treat combines one way of cooking: pieces of soft dough are fried in a large quantity of heated oil, like donuts or brushwood, and then poured with honey-based hot syrup and left to set, then cut and served.

The Tatar chak-chak is prepared on the basis of a simple test of eggs and flour, in modern variations of the recipe, a melted butter, which increases the elasticity and softness of the dough, also began to add to the composition of the dough.

The recipe for a chak-chak test is so quick and elementary that even a novice cook will cope with it in two counts. The butter should be melted and left to cool slightly while you whisk the eggs. For syrup, it is enough to pour sugar to honey and leave everything to cook until the crystals are completely melted. At the end of the preparation, the fried straw of dough is mixed with the syrup, gently tamped into the chosen form and left until completely cooled.

Chuck-chuck recipe for yolks, which melts in the mouth

Light and air chak-chak is obtained from a soft dough based on a large number of yolks and a whole pair of proteins. Extra softness is provided by milk.

Pour a little milk into the mixture of whole eggs and egg yolks. Pour a pinch of salt, then whisk. To the egg mixture, start spilling the flour in portions. The flour should be sieved first and its total quantity determined by humidity, which is why the product is added portionwise until the soft dough is collected together.

Finished dough thinly rolled and cut into strips. Fry in preheated oil until tender.

For syrup, combine an equal volume of honey and sugar and cook over medium heat until the crystals dissolve. Pour the honey mixture with straws from the dough, after mixing, give the dessert the desired shape and let cool.

Chuck-chak with condensed milk in the oven - recipe without vodka

This variation of the chak-chak has little to do with the original: except that the noodles from the dough are baked in the oven, after that it also mixes not with honey, but with condensed milk. An interesting dish for those who have already tried the original version.

To prepare the dough, it is sufficient to mix the first three ingredients together until a soft and pliable mass is obtained. After, the dough can be covered and left to lie down for about half an hour, to simplify the rolling. Roll the dough into a thin layer, cut it into strips like vermicelli, place on a baking tray and leave it brown at 180 degrees. Remove the hot straw into a bowl and pour it with condensed milk, leave it to cool.
