So, fill almonds with boiling water, leave for 5 minutes, and then peel the nuts from the skin and cut into large pieces. Egg, vanilla and plain sugar are mixed in a separate bowl and beat a little. Add a soft oil, sprinkle baking powder, flour and knead a homogeneous, but rather dense dough. Next, we throw in it raisins and chopped almonds, evenly mixing them into our mass. We cover the baking tray with baking paper, divide the dough in half, from each roll out a long sausage and spread it on a baking tray. We send the workpieces into a preheated oven to 180 degrees and bake for 25 minutes.

Then cool them on a baking sheet and with a sharp knife gently cut the diagonally into slices. Lay them in one layer on a baking sheet and return the cookies back to the oven for another 20 minutes. Ready almond biscotti is completely cooled and stored in a bag or in a box. To eat a treat is best with coffee, tea, juice and other drinks.

Almond biscotti with cherry

Almond soaked for 15 minutes in boiling water. Then we merge the water, remove it with nuts skin and lightly fry them in a dry frying pan. After that, the almonds are chopped and poured into a bowl. Add the shredded cherry to it and mix it.

In another vessel we combine sifted flour, salt, sugar, vanilla sugar and baking powder. Add the beaten eggs to the dry mixture, pour a little water and mix a little sticky, doughy dough. Next, we mix in it orange grated zest and nuts with cherries.

The resulting mass is divided into 2 parts, rolled from each sausage, put them on a baking tray and bake for 30 minutes in a preheated oven. After that, carefully take out the cookies , lightly cool, slice diagonally and brown the biscotti again for 10 minutes.
