First, carefully break the eggs and separate the yolks from the proteins. The most important thing is that the proteins are separated from the yolks as carefully as possible. Proteins should be at room temperature. Yolks better cool, then whisk them with sugar, leaving about 1 tbsp. a spoonful of sugar for sprinkling. When the mass has turned white, we gradually intervene in it sifted flour 2 times. When the flour is combined with the yolks, start whipping the squirrels. Proteins should be beaten at medium speed, so that the mass turned out to be sufficiently dense, but not rigid. Very gently intercalate the proteins in the dough, using a spoon or spatula, so that the structure of the dough is airy and gentle. Now shift the mass into a culinary bag and squeeze out of it small strips on a baking sheet, pasted with baking paper, oiled with natural butter. Sprinkle them with sugar powder, grinded from the remaining sugar. We place a baking tray with cookies in the oven, heated to 180 ° C for 12-14 minutes. The cookie should acquire a ruddy shade. How to bake "Savoyardi" for tiramisu? Follow the recipe given above, but put 100 g of sugar.

We'll sort out and wash the berries, drop them in a colander or strainer and let them drain. We combine the cooled eggs with the yolks, crush to homogeneity and put them on a water bath. Step by step, let's mix vanillin and sugar. When the mass begins to foam, we remove it from the water bath and let it cool. Cream cool, vzobem and, gradually adding to the egg mass, we will whip until homogeneity. Wine mixed with juice. Juice can be replaced with mineral water. We will dip a short cookie in this mixture. The cookie should be soaked in wine, but it should not fade. For example, if the dessert is prepared portionwise, we put the cookies in the crockery. We put the berries on the cookies with a very thin layer (about half of the portion), over the berries we pour out half of the cream from eggs and cream. We remove the dessert in the refrigerator for 40 minutes, then put all layers again: Savoyardi biscuits, berries, cream. When the dessert recools, sprinkle it with cocoa or grated (necessarily very bitter) chocolate.
