Grind one peeled onion and fry it on high heat with 3 tablespoons of olive oil, chopped garlic and salt, until soft.

While the onions are fried, dissolve the yeast in a glass of warm water and let them stand for about 5 minutes. Now turn on the mixer (or take a whisk) and add the yeast with water in a bowl with a glass of milk. There, too, use a tablespoon of salt, sugar, toasted onions and begin to mix the flour. The resulting elastic dough is placed in a bowl greased with olive oil and cover with foil. Allow the dough to rise in a warm place for about an hour and a half, then mix again and let it go a second time for an hour.

Now the dough can be laid out on a greased baking sheet, spread it over the surface , cover with a towel and leave again for 45 minutes.

Meanwhile, we cook the remaining 2 bulbs: cut them into half rings and cook on olive oil with salt and pepper until soft.

In the risen test, we make our fingers with grooves and distribute roasted onions over them. Bake focaccia at 230 degrees for 30-35 minutes.
