Soup kulesh - a dish, formed in the Ukrainian and South-Russian culinary traditions, in the field kitchen of the Zaporozhye Cossacks. The classic traditional millet kulesh - quite simple in cooking, but a hearty and tasty dish. Replaces the first and second. It is a thick soup-soup, close in consistency to cereal, cooked usually from millet with the addition of various other ingredients (traditionally it is pork cracklings and onion fried in fat, which is released during frying from squash). The name came from the Hungarian word "kolesh" (millet). The other ingredients of the kulesh - which are found, usually at the end add spices, greens, garlic (if any).

What do you need to cook the kulesh?

For the preparation of a kuleshka, in principle, any cereal and any meat is good, but it is better if the groats are well boiled. You can use corned beef, potatoes and wheat, as well as corn, so even coarse flour, corn grits, rice and pea bean. How to cook kulesh? Act like this: first cracklings lightly fry in the cauliflower, then add the chopped onion and bring it to a golden color in the emitting fat. Then add the millet and water, mix and cook until ready, at the end season with spices, chopped herbs and garlic.

How to cook the kulesh from these ingredients? We cut the meat into small pieces, fill it with water and cook in a saucepan until ready with a laurel, peppercorn and cloves, periodically removing fat and noise. Then we take the meat out of the broth and put into it the sorted and washed several times millet, slightly salted and continue to cook. Minutes for 5-10 until the end of the cooking process, we return pieces of boiled meat and add sliced ​​finely and fried on the salted onions. Adding 1-2 tablespoons of tomato paste, too, does not hurt. We season the kulesh with dry spices. Stirring. Directly before serving, season with chopped herbs and garlic to taste.

Pancakes on the kulesh

We'll start the spoon: 1 glass of warm milk + sugar + yeast + 1 tablespoon of flour. We mix it, cover it and put it in a warm place for half an hour.

Millet cook until ready (should get a thin cereal), add oil (it should completely melt). Transfer it to a bowl. Add 1 glass of milk, you can even cold. We mix and weave the spit. We add 2 eggs, add it, mix it, gradually add the sifted flour. We will carefully knead it. The dough should look like a pancake. We will cover a bowl with a test napkin and place in a warm place for about 1-1,5 hours. Warm up 1 glass of milk, soda is extinguished and diluted in a small amount of water, add all this to the dough that comes up and quickly mix. You can start baking pancakes, it is better to grease the frying pan with lard. Each ready-made pancake is smeared with butter over the top side.
