First, let's prepare the dough: in a bowl, we sift the flour twice and mix it with a pinch of salt. Then pour in water, add vegetable oil and knead the dough with your hands for 4-5 minutes. We wrap it in a film and leave it to stand aside for 20-25 minutes.

For the filling of cottage cheese, mash with a fork, or rub through a sieve. Sorrel and green onions are thoroughly washed in water, shaken and lightly dipped with paper towels. We remove from the sorrel thick petioles and finely chop it. We chop the green onions, add greens to cottage cheese, mix and slightly add salt to taste.

From the dough we pick off small pieces, roll them into balls and roll each into a very thin cake. Further on one half of a flat cake we put a little of a stuffing, we cover with the second part and we splash edges. Now take a cast-iron frying pan, heat it and lay out our cakes. Fry them until cooked on low heat, transfer to a plate, grease with melted butter and serve to the table.
