How to cook panacotta?

Panacota is a dessert that came to us from Italy. Like all Mediterranean dishes, it is very refined, but easy enough to prepare. Its basis is only two ingredients: cream and gelatin. And to diversify the taste palette of dessert, include your imagination and add fruits, berries, sweet syrups and sauces. Let's consider with you in more detail how to cook panacota at home.

Gelatin in advance poured into a bowl, soaked in cool water and leave to swell for about 2 hours. A vanilla pod is cut along and unfolds the flaps. With a sharp knife, carefully separate all the seeds. Now measure exactly 350 ml of cream, pour them into a saucepan with a thick bottom and add vanilla seeds and sugar. Mix the mixture thoroughly and put it on medium heat. Bring the cream to a boil, but do not boil. When they warm up well, remove from heat and filter through several layers of gauze.

The remaining cream is combined with the chicken yolks and mix the mass until uniform with a fork, without whipping. Swell the gelatin well squeezed, draining excess water. Then add it to the creamy egg mass and mix again. After that, gently pour in warm cream and put the dishes back on the stove. Turn on the minimum heat, heat it and as soon as the cream starts to boil, turn off the fire. Put the saucepan on the table and leave to cool to room temperature. After 15-20 minutes, when the cream is sufficiently cool, pour them into the mixer bowl and whisk at the highest speed for 1-2 minutes.

Then we lower the dishes for beating into a large saucepan, filled with iced water by about one third, to get a cold "water bath". Continue to beat the panacotte with a mixer until the mass is completely cooled.

Now we take small transparent pialles, mousse molds, beautiful wine glasses or other serving dishes. Lightly lubricate them with vegetable oil and pour the mixture into molds. We put the dessert in the refrigerator for about 4-5 hours. Having finished the prepared panacotta, we lower the molds for a few seconds into hot water, and then gently turn them over to the plates. We decorate the delicacy with fresh berries and pieces of fruit.

So, first we pour gelatin into the bowl, fill it with a small amount of hot water and leave it to swell. This time, beat the mixer with a chicken yolk and a half serving of sugar. Separately boil the milk, cool and mix with the beaten yolk. Then put this mixture on a weak fire, bring to a boil and as soon as the mass is slightly thickened, remove from the plate and cool. Then whisk the cream well with the remaining sugar and pour this cream into the egg-milk mixture together with gelatin. All the ingredients are mixed and filtered through a sieve.

We pour out a lot of molds, put it for 2 hours in the cold to freeze. To beautifully lay the dessert on a dish, we hold the mold for a few seconds in hot water and turn it over quickly to a plate. When serving, pour panacotta with cherry syrup, sprinkle with grated chocolate, confiture or use other fruit syrups.
