Tyurya: recipe

Tyurya is a soup-type dish, formed in the culinary traditions of the poorest layers of the population of the Russian and Belarusian villages. This is simple and raw, relatively high-calorie soup. In poor village families, tyranny was often an everyday dish until the 19th century. Usually, kvas is used as a basis for preparing tuori. You can prepare the turkey on milk or yogurt. The remaining components are bread (mostly rye, although this is not a principle), or bread crumbs, crusts and onions. To this everything was added grated radish and greens. Served with vegetable oil. The boiled potatoes and other finely chopped vegetables were also added to the turkey (if any of these products were available at the time of preparation).

How to cook a turkey?

The process of making tjuri is as simple as possible: a liquid base (kvass or milk, curdled milk) is poured into a bowl and all other ingredients are crushed there. Then season with oil and salt, stir and eat. Modern turkey can be prepared and served as a liquid snack on hot days (instead of okroshki). It is quite good to cook this dish during the days of fasting.

Belarusian version

So, for connoisseurs and lovers of the prison in Belarusian.

Ingredients:

Preparation:

We clean the radish and rub it on a coarse grater. Sop off, pour oil and mix. Let's stand a little. And while the leaves from the radish, green onions and the rest of the greens finely chopped. Boil the potatoes finely. We will crumble the bread (or break the crackers into small enough pieces). Garlic will be sold through the press. All mixed in a saucepan and poured with kvass or water, mixed. Let's stand for about 10-15 minutes, until the bread has softened. The Belarusian prison is ready. It would be nice, of course, and some spices slightly add (for example, ground black pepper), but this is optional. Instead of a radish turnip or a rutabaka. Do not spoil this simple soup and a spoonful of dense rustic sour cream.

TYURIA WITH MILK

You can cook a milk turkey. This recipe is good for dietary and baby food. There are 2 options. If we cook for adults, we do everything the same way as in the recipe with kvass or water, only as a liquid base we use milk, and better - curdled milk. You can cook a sweet dairy turkey - this dish is good for children up to 4-5 years of age, well, for fans. It should be noted that milk tuiras are more caloric than cooked on the basis of kvass or water.

Ingredients:

Preparation:

Let's make breadcrumbs: first cut the bread slices and trim the crust, then cut it in small pieces - cubes or slabs and dry it on a dry baking tray in the oven. We rinse the pan with cold water, pour the milk and heat it over low heat. If the milk is damp, it is better, generally, to warm it in a water bath. Preheated milk pour the croutons in a bowl or soup cup. Add to the plate honey or jam. You can season with cardamom, saffron, cinnamon and vanilla, just not too active. We mix and wait until the crunches soften. If we feed the child - the tyranny should not be hot, but warm.
