The notorious Italian gelato gelato conquered the world not only with a variety of stunning flavors, but also with a unique texture: the ice cream remained soft even after freezing, and with prolonged stay in the heat turned into a delicate creamy substance.

In the homeland, gelato is prepared by special masters, but you can prepare decent Italian ice cream without secret recipes, but only using the instructions that we will describe below.

This ice cream has not only that very classical texture of the original, but also a light, refreshing and original flavor mix of lemon and thyme.

To warm up the mixture, it is better to use thick-walled utensils, which distributes the heat as much as possible evenly and keeps it well.

  1. Pour milk into the pan with cream and leave to warm up, not leading up to a boil. When the milk mixture is warmed up, put into it twigs of thyme, cover the dishes and leave for half an hour.
  2. Whisk yolks with lemon zest, juice and sugar for at least three minutes, until the mass gets air and becomes creamy.
  3. Strain the milk by extracting twigs of thyme. Re-heat it, again almost reaching the boil, and then start pouring in portions to the yolks with constant whipping.
  4. The resulting basis of home-made Italian ice cream is returned to the fire and cook until thickened for 12-15 minutes. Allow the thickened mixture to cool, then pour into the ice cream and cook, following the directions to the device.

Dreamed of eating ice cream for breakfast? Now no one is able to prohibit this. This gelato recipe is filled with banana oatmeal flavors and contains oat flakes.

  1. Before you make an Italian ice cream, you need to boil the oatmeal.
  2. Preheat a mixture of milk with sugar and starch, and when it comes to a boil, pour the oatmeal and cook until ready. Whisk the oatmeal with ripe bananas until a homogeneous mass is formed, then cool for less than 6 hours and then send it to the ice cream maker.

Italian ice cream sevenfredo - recipe at home

Semifredo is, in fact, the same ice cream, only served in the form of a frozen dessert with fruit filling. As the last, anything can act. In the recipe below the addition of ice cream has become a fresh fig.

  1. Cut the figs, sprinkle it with 135 g of sugar and leave over medium heat to boil to the consistency of the jam.
  2. After about 20 minutes the desired consistency will be achieved, which means that you can pour lemon juice into the jam and remove it from the fire.
  3. Start to beat the eggs until they turn into a lush foamy mass.
  4. When this happens, start to pour sugar in portions, whisking all until firm peaks.
  5. Separately whip and cream, also to steady peaks.
  6. Carefully combine both air masses with each other and with the jam, then distribute in a mold and leave until completely frozen.
  7. Ready dessert gently remove from the mold, dipping it into warm water, and cut into pieces.
