Lobio - the classic recipe

Beans are soaked for the night, we drain the old water in the morning and fill it with fresh, put the legumes on the fire and cook until soft. Usually the recipe of lobio from red or green beans means the last one is brewed, with further kneading to the desired consistency.

In general, while the beans are brewed, cut the onions into cubes, fry it to a golden color and for a couple of minutes until ready, squeeze a pair of garlic cloves into the passivation.

When the beans are ready to be lightly mashed or turned into a paste - you decide, most importantly - do not drain the remaining water, it must cover the beans in order to lobio turned liquid. When the bean is mashed - lay the roast, chopped greens, a little chili (without seeds), and 2 cloves of garlic, reduce the fire and season the dish with salt and pepper to taste (note: beans do not need to be brewed during cooking).

We serve the dish in hot or cold form, with lavash or corn tortilla.

Lobio of beans with tomatoes and nuts

From the classical recipes we move on to more modernized ones. Although lobio with walnuts is a time-tested recipe, tomatoes in a hot dish have been added relatively recently, and this lobio has greatly benefited from taste.

Before making lobio, the bean pods are scalded and cut in half, after a good digestion in fresh water. While the bean is brewed - we will deal with tomatoes, they must be peeled, cut into slices and fried for 2-3 minutes with salt and pepper. Then the softened tomatoes must be passed through a meat grinder, sieve or blender, in general, turned into puree in any way. After, onions are sliced ​​and fried with garlic.

When the beans are ready, we add it to the tomato puree, we also send the roast, coriander and spices to taste. The Lobio is almost ready, it remains to stain it for another 10-15 minutes and can be served to the table.

Lobio with chicken - recipe

Lobio - this dish is lean, but if you do not follow a diet, add a little chicken, beef or lamb in the recipe, from this the dish will become more nutritious and rich.

Beans fill with water, boil for 20 minutes, and after stewing, draining the water, another 20 minutes. Then the lobio is refilled with water or broth and cook again for 20 minutes. We chop the onion and send it to the pan with beans for 15 minutes. Greens and garlic crushed and pawned to the beans for 7-10 minutes until cooked.
