We begin with a description of the recipe for the test for samsa. In a bowl, pour flour and salt. We add oil and pour in hot boiling water. We mix and leave for a quarter of an hour approximately. We roll a ball out of the dough, cover it and remove it for 20 minutes in the refrigerator.

Now take out the dough, divide it into 12 parts. The table is torn with flour and each part is rolled into a flat cake with a rolling pin. On top put about 2 teaspoons of filling and about 10 g of butter. The edges of each tortillas with a culinary brush are moistened with water and we make a patty of a triangular shape. We cover the baking tray with bakery paper, lubricate with oil, lay out our blanks, top each of them with a whipped egg. In a moderately heated oven, bake for about 45 minutes.

First, prepare the dough for the samsa: in a container with flour (preferably sifted) pour boiling water, vegetable oil, put about a pinch of salt and mix everything well. After about a quarter of an hour put the mass on the table, pour the flour and knead the soft dough. For 20 minutes, we remove it in the refrigerator. Onions are crumbly crumbled, we pass it on cream butter. Fresh greens (dill, coriander, parsley) mine and dry. Then it is crushed and mixed with onions. Cheese cut into small cubes, add it to the rest of the ingredients and mix well. The filling is ready. Now take the dough, divide it into pieces of about 50 g each. Roll the pieces into circles with a diameter of 10 cm. In the center of each of them put the filling and tear the edges, forming a patty of a triangular shape. The resulting blanks are laid out on a baking sheet covered with baking paper. Top grease with water and tear with sesame seeds. Bake at moderate temperature until rouge.

In a bowl, pour in the flour, then put a pinch of salt and chilled butter, grated. We rub it all over with good hands. Pour about 100 ml of water and stir again quickly so that the oil does not melt. We roll a ball out of the dough, wrap it with a film and put it in the refrigerator for at least half an hour.

Now we begin to prepare the filling: small chopped onion, chop the leg from the skin, cut the meat, grind it. Mix the meat with onions, salt, pepper.

Now we take the dough from the fridge, divide it in half. We roll from one part the sausage, which cut into 7 parts. The obtained pieces are kneaded by hand and rolled out so that a circle with a diameter of about 12 cm is obtained. We put the filling into the center of each circle. Now we form a triangular patty. We put the samsa on a baking tray, lined with baking paper seams down. Whisk the egg yolk with 1 tablespoon of water and the resulting mass grease the top of the blanks. We tread on top with sesame seeds and bake at 180 degrees for about 45 minutes.
