It is impossible to imagine a kitchen without knives, but even such seemingly durable items also need constant care. After all, if the knife is dulled, then it becomes impossible to work in the kitchen. To sharpen the knives use various devices: musates, disk sharpeners, stones, etc.

Although everyone uses every day knives, but not all are familiar with the need for such sharpening of the object as musat. In this article we will consider in which cases and how exactly it is necessary to use musat.

What is musat?

Musat - a rod with a handle, made of certain materials and used to align the cutting edge of the knife and increase sharpness, i.e. to maintain it is always in working order.

Outwardly, they are very similar to the musates of the rods for knife sharpening. The difference between them is that the muskets clean the already sharpened edge of the blade from the metal fringe on it, leveling the irregularities and burrs on it, and the rods - scraping the metal along the edge of the blade of the knife, sharpen it in an acute angle.

There are also table mousses, in which two twigs are used, with a special very durable coating in a plastic casing attached to the table.

The process of how to sharpen knives with musat, occurs as follows:

  1. After placing a towel on it, we place it strictly vertically with the tip pointing downwards.
  2. Holding the blade at the specified angle, pull the knife from top to bottom on the surface of the moussat, describing the arc, so that starting the movement near knife handles, finish at its tip.
  3. Moving the knife to the other side of the moussat, do also with the second side of the blade.
  4. Such movements are performed 2-4 times on each side.

How to choose the right musat?

To determine the choice of musat, you need to know what it is used for and where it will be used. For frequent use (in professional kitchens) a round metallic moussat with an average grain size of 18 to 30 cm in length is more suitable, and a smaller length of muskat (18-20 cm) is better for home.

Whichever you choose, you must always have more than the length of your blade at least 5 cm.
