Turtle

Turtle soup is a traditional cult dish in the culinary traditions of many Far Eastern (and not only) peoples. Currently turtle soup is popular not only in the East, it is considered a very useful delicacy and a real gourmet dish.

In order not to miss the first animal that was caught or bought at the pet store, it would be nice to first find out what kinds of turtle soup is cooked (there are about 230 modern types). There are cases of severe and even fatal poisonings by some species. It should be noted that the marsh and Mediterranean turtles (found in Russia and Ukraine) are listed in the red book. First, we must cut off the head and limbs from the turtle, drain the blood into a separate cup. Carefully separate the carapace from the plastron (upper and lower parts of the shell), gut, trying not to touch the gallbladder (put it aside). Inside it is better to throw. Remove the meat, thoroughly rinse with cold running water and cut into small slices. We boil the slices in salted water for 3-4 hours, along with the beef, cut into small pieces, periodically removing the noise. By the end of the process, add roots, and onions. We catch meat and filter the broth. We combine meat and broth.

In a separate saucepan pour the wine, add the spices, boil for 4 minutes and leave to stand for 15 minutes. We pour into a saucepan with soup. We add stalks of asparagus and sweet pepper, cut into short straws. We cook for 8 minutes after boiling. We fill the soup with starch for density.

We pour soup from the turtle on soup cups, season with chopped garlic and hot pepper. Sprinkle with finely chopped herbs.
