Buns with jam

Of course, biscuits with jam - this is not the food of every day, but sometimes, as a confectionery refreshment, such baking with freshly brewed tea or coffee can quite well act as a first breakfast. You can afford such a pleasant breakfast 1-2 times a month, and slender, sportsmen and children are not harmful and more often.

Buns can be baked with jams from various fruits and from different types of dough (puff, yeast, etc.). You can buy puff pastry in shops, yeast dough in kitchens, but it is better, of course, to make dough for biscuits with jam yourself - so you will be assured of the quality of all the ingredients and the correctness of the cooking methods.

Sour cream and butter should be cold, better - very cold (preferably, and the temperature in the room was not more than 20 degrees C).

It is better to mix the dough with a mixer or using a combine, so the products during the kneading process will not have time to heat up and the dough will not stick to your hands (in extreme cases, a spatula, but not hands).

Sift flour into a bowl, add soda, salt, brandy, sour cream and crushed oil (it can be rubbed on a large grater or cut with a knife). Mix and knead the dough until smooth.

We roll the dough into a layer and, bending the edges to the center, fold it in an envelope. Roll out. Repeat the cycle 2-3 more times. We wrap the dough in a food film and place it in the freezer compartment of the refrigerator for at least 40 minutes or simply on the shelf of the refrigerator for 8-12 hours.

Roll the dough into a layer no more than 0.5 cm thick. Cut the edges smoothly and cut the dough into squares with a side of approximately 10-12 cm.

Lubricate the edges of the two sides of the square with water (or egg), as if drawing a strip 0.5 cm wide. In the center of each square, put a spoonful of raspberry jam (it should not be liquid, if necessary, correct the density with corn starch or choose only berries from jam) .

We fold a layered bun in the form of a triangle, well pressing down the edges. Put the puffs on a baking sheet covered with oiled baking paper. The surface of the layers is coated with egg white and sprinkled with sugar. We bake puff pastry with jam at a temperature of about 200 degrees C for about 20-25 minutes.

We serve with fresh tea, coffee, cocoa, compote, carcade, mate, rooiboshem.

As you noticed, there is no sugar and margarine in the test, which distinguishes this puff pastry recipe from others.

Of course, layered buns can be made not only with raspberry jam, but also any other, for example, apricot or strawberry (or even with jam, jam, confiture, homemade marmalade).
