Preparation

The first step is to prepare the air marshmallow marshmallow for cocoa. The process of its creation is long and laborious, but the result is worth it. First, to prepare the syrup in hot water we dissolve 175 grams of granulated sugar, add citric acid and after boiling the mass leave on a moderate fire under the lid for forty five minutes. After that, when the syrup is a little cool, we introduce into it baking soda and stir well.

Gelatin pour water at room temperature (30 ml) and let stand for about twenty minutes, after which we warm the mass, stirring, in a water bath until all the gelatin crystals are blooming.

In a separate scoop we connect the remaining water, sugar and a pinch of salt and add 80 grams of the previously prepared syrup. We bring the mixture, stirring, to the boiling point. Then we reduce the heat to a minimum and heat the mass for another eight minutes, without interfering.

Dissolve the gelatin in a convenient whipping vessel and start at a low speed to process it with a mixer. After a minute, pour in a little hot syrup, increase the speed of the device and whisk for at least fifteen minutes. The result of this procedure should be a whitened air and a viscous mass, which we put into a form, laid with food oiled film.

Now we have the workpiece in the refrigerator for several hours to freeze, and after that we turn it over to the table, sprinkled with a mixture of powdered sugar and starch. Separate carefully the food film, cut the sticky layer into cubes and pan them in the sweetest starch mixture. Marshmallow for cocoa is ready.

Now we'll make a drink. To do this, mix the cocoa powder with sugar, add a little cold milk and stir to dissolve all the lumps. The rest of the milk is heated to a boil, pour into it a prepared base of cocoa powder and sugar, mix, boil in a small heat for a couple of minutes and remove from heat.

To serve, pour hot drink on the cups and in each throw a few cubes of cooked air marshmallow marshmallow. In a few minutes the cubes will completely or partially disperse into cocoa, covering its surface with amazing foam.
