Blackberry rowan for wine should only choose ripe, without rotten berries, and ideally a little frozen or collected after the first frost. Berry mass we sort out and get rid of unnecessary specimens. Now the rowan is well kneaded, so that not a single whole remains. You can use a crib for this purpose or simply crush berries with clean hands.

At the next stage, the resulting pulp should be placed on the primary fermentation. To do this, mix it in a suitable container with sugar (700 g) and unwashed raisins and place indoors under room conditions for seven days. Be sure to stir the contents of the bowl every day to avoid souring.

A week later, using a gauze cut, strain the fermented mash and separate the juice from the pulp. A liquid base is poured into a fermentation vessel, we install a hydraulic seal on it or put on a rubber glove with one finger pierced with a needle.

The pulp left in the gauze is mixed with granulated sugar (1.3 kg), we top up the filtered water and once again let it froze, covered with a towel or cloth and without forgetting to mix daily. After another seven days we squeeze the mash again in the gauze, we get rid of the pulp, and add the liquid juice to the main fermentation vessel, taking off for a minute a septum or a glove. During the whole fermentation process, it is necessary to drain the base of the wine every week from the sediment, also removing the foam. As soon as the bubbles in the water seal system cease to stand out or the glove is blown off, it is possible to drain the last time the young wine from the sediment and bottled for further exposure in a cool place. In order to taste the drink balanced and harmonious, it needs to last for three to five months.

For those who do not wish to prepare wine according to the simple classic recipe outlined above, due to the length of the process, we suggest preparing the drink in a simple and quick way with the participation of vodka.

To implement the idea as well as in the previous case, we choose only quality berries. They can be either fresh or frozen. In the latter case, the drink will be less astringent and astringent. We rub the berry mass with a pestle or knead it with hands, after which, together with the washed leaves from the cherry, we determine into the pan. We pour filtered water to the berry mass with leaves and place the container on the plate hotplate. After boiling with periodic stirring, we reduce the heat and boil for about fifteen minutes.

Next, filter the broth and squeeze a little, add sugar and acid to the liquid and lemon acid, and stir so that all the crystals are dissolved.
