The root of ginger is cleaned and three on a fine grater. We take a saucepan with a thick bottom, pour olive oil into it and warm it, then add ginger. We clean mangoes, remove the stone, and finely chop the flesh. Add it to the ginger. Stew on a small fire, stirring constantly, about 10 minutes. Then pour in the water, cover the pan with a lid and simmer for another 10 minutes. Fill the gelatin with cold water to make it swell.
