Dietary broth

Practitioners of various diets and healthy food sometimes prepare broths, they can be cooked from fish, low-fat meat or vegetables. Basic dietary broths are excellently absorbed by the human body, they are well suited for feeding children from 2 years old and under different clinical conditions.

Meat broth (slightly flavored) is good for eating alone or with other dishes. It is also possible to prepare various dietary soups based on dietary broths.

How to cook a classic chicken diet broth?

For the preparation of dietary broth, it is better to choose fresh chilled meat from young birds. You can buy separate parts of carcasses, namely: breasts, cervical and back - they are most suitable for broth. Feet is best not to use - they are somewhat zhirnovaty. In any case, to prepare a dietary broth, the skin should be removed.

Preparation

First, prepare the meat: remove the skin and rinse. Bulb, parsley root and carrots clean (carrots can be cut, only not too finely).

We put the meat in a saucepan, pour the necessary volume of water and cook. After a confident boil, reduce the fire to medium and cook chicken for about 3-5 minutes, then drain the liquid. Now carefully wash the meat (preferably warm boiled water) and transfer it to a clean pan, then refill with fresh cold water, set to cook and lay the rest of the ingredients at once. Cook on the lowest heat, covering the lid, for about 40-50 minutes, periodically carefully removing the noise.

Dietary chicken broth should turn out to be transparent (if the transparency is insufficient, we introduce a brace from egg white and carefully strain). Carrots and meat can be used in the preparation of soups (the rest is discarded).

Dietary chicken broth can be served, for example, with the meat on which it was cooked, with a boiled egg, with mashed potatoes , rice and / or other dietary dishes. Do not forget about fresh greens.

Acting in approximately the same way (see above), you can prepare dietary broths from turkey meat, lean beef or lamb (these types of meat are cooked somewhat longer than chicken meat).
