Focaccia with cheese

Focaccia is a traditional Italian flat cake, a simple food of peasants and soldiers. For the preparation of focaccia, you can use different types of dough, or yeast, the same as for pizza , either fresh or rich. This can be a simpler dough of just three components: flour, water and olive oil. Sometimes milk is added. There are variants of sweet, salty and neutral taste with different fillings and without.

Fillings can be added to the dough or laid out on an already prepared hot cake. The filling can include herbs (basil, oregano and others, they are usually put into dough), as well as olives, tomatoes, onions, fruits, cheeses and other products typical for the economy of a particular area (each with its own cooking traditions). Cheeses, in any case, are very suitable for focaccia: the cheese is slightly melted on a hot cake, and then slightly cools, thus gluing other components of the filling.

Consider in different ways how you can cook focaccia with cheese. Dough is better to cook independently from whole wheat flour of durum wheat.

When the dough well approached and increased in volume, we knead it, divide it into equal pieces and roll out the focaccia cakes (not too thin), best of all - of a round shape.

At home, it is most convenient to fry the oven in a large frying pan, cast iron or aluminum, without coatings (as an option, in an oven, in a heated Russian oven, on a special ceramic round "stone" or baking sheet). If in a frying pan - we warm it up, grease it with a slice of fat and bake focaccia (with a twist) to a ruddy-golden hue. If in the oven, then at a temperature of 200 degrees about 20 minutes. Ready hot focaccia sprinkled with grated cheese and chopped green onions. Slightly cool, and you can serve.

Of course, it's good to have such a cake for something else, for example, ham, tomatoes and a glass of good unglazed table wine to serve.

You can bake a more satisfying complex double focaccia in Ligurian style with cheese, basil, onion, ham or smoked sausage, sweet pepper and olives.
