Part of the turkey carcass thoroughly rinse and pour in a saucepan with cold water (a small amount). Let's cook it. We put a clove in the peeled onion and also put it in a pan with a laurel leaf and peppercorn. Bring to a boil, do not forget to remove fat and noise, and reduce the fire to a minimum. Boil for about 1.5-2 hours (depends on the rigidity of meat). Cool in broth until warm. Well cooked turkey broth is perfectly gelled, this property is very suitable for making ham.

We extract parts of the turkey and cut the meat. Divide the cut meat into 3 approximately equal parts. The pieces of the first part should be relatively large pieces. The meat of the second part should be ground with a knife. The rest of the meat should be passed through the meat grinder, if it turned out too dry, you can add a little meat broth .

All this is mixed in a bowl and seasoned with salt, chopped garlic, ground black and red hot pepper, sweet paprika, grated nutmeg, cardamom and saffron. From such a heterogeneous mixture of ham will get an interesting texture.

If you do not have a ham, do not get discouraged. Cut off the top of the plastic bottle with a capacity of 1.5-2 liters. Wash the bottom thoroughly. Densely fill it with ham minced meat (it, by the way, is called the famous word "spam"), but not to the very edges. On top put a freely passing solid gasket (for example, a plastic lid, a coffee saucer), and on top of it organize oppression (put something heavy) and place the structure on the shelf in the refrigerator for hours, at least 8, or better at 12, let it prepress and solidify .

Carefully cut off the bottom of the plastic mold from the bottle with a knife and gently push out the cylindrical piece of the finished ham. Cut into thin (or not very thin) slices. You can beautifully put slices on a dish and decorate with greens or make sandwiches with ham .

Alternatively, you can wrap the stuffing in a film, form something like a loaf, tightly rewind the rubber band and put it in the fridge between the two boards, and put the load on top.
