Classic Waldorf salad - recipe
Despite the relative minimalism in its composition, Waldorf salad is hard to call the easiest to prepare: a complex combination of tastes of different varieties of apples and close attention to each ingredient, however, and made this dish a modern classic.
Ingredients:
For nuts:
- walnut - 2 items;
- egg white;
- 1 teaspoon spice mix (paprika, cayenne pepper, ground fennel and coriander);
- sugar - 120 g.
For refueling:
- yogurt-125 ml;
- sour cream - 125 ml;
- lemon juice - 30 ml;
- walnut oil - 50 ml.
For salad:
- root of celery (cut into strips) - 1/2 st;
- apples "Granny Smitt" - 150 g;
- apples "Gala" - 150 g;
- small red apples - 12 pcs .;
- celery leaves.
Preparation
For the preparation of candied nuts, the walnuts themselves are first mixed with egg white, and then sprinkled with a mixture of spices. Distribute the nuts on a sheet of parchment and bake for 20 minutes at 180 ° C.
For filling, combine yogurt with sour cream, lemon juice and walnut oil.
The main thing in the classic Waldorf is the accurate and correct cutting, so we take a shredder with additional transverse teeth and cut it with all apples and celery root. Mix the salad with dressing, spread on the plates with a special ring, and then sprinkle with nuts and young leaves of celery.
Waldorf salad with apples, celery and cabbage
As we noted at the beginning of the article, there can be many variations of classic American salad, and here's one of them. Here, in addition to the basic ingredients, goat cheese and cabbage are contained, and the composition of the dressing is slightly more diverse than in the original version.
Ingredients:
- cabbage head - 1 kg;
- apples "Granny Smitt" - 260 g;
- stalks of celery - 90 g;
- goat cheese - 85 g;
- walnut - 1 handful;
- mayonnaise - 80 ml;
- yoghurt - 80 ml;
- Dijon mustard - 15 g;
- sugar - 15 g;
- olive oil - 60 ml;
- red wine vinegar - 60 ml;
- a bunch of basil and dill.
Preparation
Cut cabbage and put it in a salad bowl. Finely strips also cut cleaned apples and a stalk of celery. Also we connect them with cabbage. We spread the goat cheese from above and sprinkle all the chopped kernels of nuts. Now it's our simple but very refined filling. For it, we whisk mayonnaise with yogurt, add mustard, sugar and butter. For taste and color, pour in red wine vinegar and dress salad dressing. Together with vegetables in the Waldorf can enter the greens of basil and dill.
American Waldorf salad with chicken
Ingredients:
- chicken fillet - 300 g;
- red apple - 60 g;
- green grapes (berries) - 1 handful;
- stalks of celery - 80 g;
- walnuts - 1 handful;
- mayonnaise - 30 g;
- yoghurt - 40 g;
- lemon juice - 20 ml.
Preparation
Chicken fillet, previously cleaned from films, boil in salted water and cool. Boiled fillet is sorted into fibers and put in a salad bowl. After the chicken we send halves of grapes (pitted, respectively) and a handful of large-sliced walnuts. Cut the stalks of celery across, cut apples with straw using a shredder or sharp knife. We connect all the ingredients together and start to refuel. With her, things are even simpler: whisk together whipped together mayonnaise with yogurt and lemon juice, a pinch of cayenne pepper will also not be superfluous. We fill the salad with the prepared sauce and immediately serve it to the table.
