Pound eggs with sugar, add salt and soda (be sure to extinguish soda, otherwise the pastry will have an unpleasant aftertaste). Add the sour milk and bring the mixture to a homogeneous state. Gently add the flour, stirring it into the dough. It should be similar in consistence to thick sour cream, but with lumps. Pour hot water into the dough, gently stirring until smooth. Bring the mixture to the liquid sour cream. Cover the dough with a towel and let it stand for 15 minutes. Bake in vegetable oil, gently pouring each portion of dough into a hot pan with a spoon.

Pancakes

Ingredients:

Sour milk or curdled milk - 250 ml; eggs - 2 pieces; sugar - 2 tbsp. spoons; vegetable oil - 50 ml; soda - 0,5 tsp. flour - 6 tbsp. spoons; boiling water - 100-150 ml; a pinch of salt.

Preparation

Add soda to sour milk and mix well. Make sure that the mass foams and increases in volume. Whisk the eggs, adding sugar and salt to them, until a homogeneous foam and complete dissolution of the crystals. Pour vegetable oil into the eggs with sugar and whisk again. Combine the mass with sour milk and stir well. Add small amounts of flour to the dough, mixing it until smooth. Continue stirring until all the lumps in the dough dissolve. The mass will be thicker and denser than for a normal pancake test. Dilute the dough to the desired consistency with very hot water - during the frying the dough should flow smoothly from the ladle and quickly fill the entire surface of the pan. Bake pancakes in a dry frying pan - the butter in the dough is enough. Pancakes will turn out to be thin, delicate and "lacy".
