As you know, Belarusians love potatoes. They know a lot of delicious recipes for its preparation. One of the dishes of the Belarusian cuisine is sorcerers. The recipe of sorcerers with minced meat is simple and accessible, does not require much time and special expenses. My potatoes, peeled and rubbed on the smallest grater. The mass is quite watery. We spread it in a colander or strainer and strain it, slightly pressing down with a spoon. All juice must not be removed, otherwise the base will become too dry. This it should not be, it must remain liquid, but the consistency of the mass should become thick, keep the shape. In potatoes add 1 raw egg and 1 tbsp. a spoonful of flour or starch (this is not important - use the product with which you like to work more). Now add salt and pepper to taste. The mass is well kneaded. As a filling, you can use not only pork, but also any other meat.

So, let's skip the meat with onions through a meat grinder, add sour cream (can be replaced with mayonnaise), salt and pepper. You can form wizards in different ways: the easiest way is to take a piece of potato dough into your hand and hide the meat cutlet in it. And you can do it differently: put a little dough on a frying pan with preheated oil, put a smaller meat ball on top and close it with a dough on top. Fry sorcerers from both sides to a ruddy crust. Then we reduce the fire and put it on until it is ready.

Sorcerers in the oven - recipe

In the previous recipe, we told how to prepare wizards in a frying pan. Taking the same recipe as the basis, you can make them in the oven. That is, we form potato tortillas with minced meat, put them on a baking sheet, add a little water and send them to the oven for 30-35 minutes. When the crust appears, sorcerers can be reached. If desired, 10 minutes before the end of cooking, you can sprinkle them with grated cheese.

Sorcerers with mushrooms - recipe

Peel the potatoes on a small grater, squeeze the juice, but do not pour it, but let it settle. As a result, starch should settle in the juice container. Now you can pour out the liquid, and add the starch to the grated potato. Mix the mixture, add salt and pepper to taste. Now we are engaged in stuffing: for this, mushrooms and onions are crushed and fried in vegetable oil until the liquid evaporates, salt to taste. From the potato mass, we form cakes, inside which we put 1 teaspoon of the filling, we connect the edges and roll the received balls in flour. Fry in a large amount of preheated vegetable oil until golden brown. During the frying process, the sorcerers must be turned so that they are crusted from all sides.
