In connection with the nature of employment (trade, exchange, travel), a certain part of the merchants lived reasonably well, which, of course, determined the household, including the food culture of this class. The merchant's cuisine was rich and varied, spicy and exquisite in its own way. That is, the tasty to eat and drink the merchants knew how. It is clear that on the table the people of the merchant class often had meat, as well as other products from different lands, and prepared them in different ways, very interestingly.

Ingredients:
- meat pork - 6 large slices;
- Cheese hard-to 400 g;
- mushrooms - 300 g;
- prunes - 12-18 pieces;
- Madera strong dessert - 45 ml;
- garlic - 3 cloves;
- spices ground (nutmeg, coriander, fragrant black pepper, cloves);
- greens (parsley, coriander);
- organic butter.
Preparation
Prunes are steamed in boiling water, washed and extracted pits. Cheese three on a grater. We cut the mushrooms fairly finely. Slightly beat off pieces of meat, abundantly grease the pan and put them to bake in the oven. While this happens for 45 minutes, we need to cook mushrooms (without onions). Mushrooms lightly fry in a frying pan in oil, add spices and Madeira, stew without lid, stirring for 15 minutes. Turn off the fire, add the chopped garlic, mix, wait for 2 minutes, then throw in a colander, under which a clean bowl, let the sauce drain.
