How to make a filling from cottage cheese for pancakes?
In any case, it is best to use medium-fat cottage cheese, of course, it should be fresh, even better, homemade (making such a milk is not difficult at all). Do not add sugar to the curd (if only a little bit), it's better to have some sweet and sour fruit jam or syrup from it (for example, cherry jam or berry syrups).
It is even better to add steamed dried fruits to cottage cheese. Raisins or dried apricots or prunes need to be poured with boiling water for about 15 minutes, then rinse again with boiling water (of course, prunes are removed from prunes). Large steamed dried fruit should be crushed with a knife.
Thin pancakes in milk with cottage cheese and raisins
Ingredients:
- Wheat flour (or in a mixture with barley, buckwheat and / or oats) - 1 glass;
- egg of chicken - 1 piece;
- milk - 2 cups;
- salt - 1 pinch;
- soda - 1 pinch.

For filling:
- cottage cheese - 500 g;
- raisins 150 g;
- cinnamon + powdered sugar - 2 pinch for 1 teaspoon;
- butter.
Preparation
First we prepare the filling. Steaming the raisins, when we salt the water, mix it with cottage cheese and add 1 teaspoon of powdered sugar flavored with cinnamon. All thoroughly mix with a fork. If the cottage cheese is dry, you can add a little sour cream.
Now pancakes. We combine milk, eggs, salt, soda, which is extinguished with lemon juice and necessarily sifted flour. To improve the structure of the test, taste and smell, pour 1 tbsp. a spoonful of fruit brandy.
We bake pancakes in a frying pan with low sides. Lubricate the heated frying pan with butter (using a brush) or lard (a piece on the fork). Pour a portion of dough, after 1-3 minutes turn the pancake (depends on the strength of the fire density of the dough and the thickness of the bottom of the pan). Fold the finished pancakes with a pile.
At the edge of the pancake, we put a portion of the curd filling and wrap it (bending it from the sides or leaving it open). You can, in principle, and in this form to serve pancakes to the table, but it is better to cook a little or bake.
A few pancakes with a filling put on a pan, in which melted butter, lightly fry, in the process you can gently turn over using a spatula. Alternatively, bake pancakes in the form in the oven for 20 minutes.

Lush pancakes with cottage cheese and banana and chocolate cream
Ingredients:
- wheat flour - 1 cup;
- kefir - 1.5 cups or slightly more;
- soda - 1 pinch;
- salt - 1 pinch;
- rum - 1 tbsp. a spoon;
- Chicken egg - 2 pcs .;
- butter;
For filling:
- cottage cheese - 400 g;
- banana - 1-2 pieces;
- lemon - 0,5 pieces;
For cream:
- yogurt unsweetened - 200 ml;
- cocoa powder quality or kerob - 1 tbsp. a spoon;
- powdered sugar - 2-3 tsp.
- cinnamon or vanilla - 1 pinch.
Preparation
Cottage cheese and pulp of banana with the addition of lemon juice bring the blender to the state of homogeneous mashed potatoes (you can add a little sour cream, yogurt or cream).
Prepare the chocolate cream: cocoa powder with cinnamon or vanilla is mixed with sugar powder (to avoid the formation of lumps), and then with yoghurt.
Mix in a working bowl of kefir, eggs, rum, salt, soda and necessarily sifted flour. Stir with a mixer or fork, lightly beat, but not too long.
Fry pancakes with a coup in butter frying pan and pile it together.
