Escalope - layers of meat, about 1.5 cm thick from the tenderloin, usually pig or calf. Meat on the escalopes is cut across the fibers, then they are beaten. Further, the escalopes are subjected to heat treatment. In food cultures of different peoples, different approaches to cooking are practiced: escalopes can be fried in a frying pan (in breadcrumbs or without), bake in the oven or cook over an open fire on a grate.
Escalope with potatoes - a classic recipe
Ingredients:
- escalopes from veal or pork - 1-2 pcs. per serving;
- butter, natural or pork fat;
- cognac or calvados - 30 ml;
- salt is large;
- black pepper ground;
- lemon;
- garlic - 1 clove;
- green onion.
Preparation
Lightly beat off the meat with a chef's hammer, sprinkle a bit and sprinkle with pepper.
In a frying pan, warm the fat well and fry the escalopes on each side for about 2.5-4 minutes. With a spatula, we remove the meat from the frying pan and put it into serving plates. Reduce the heat and pour into the frying pan brandy. Keep the frying pan on fire for 2-3 minutes, add the chopped garlic and a little lemon juice. We pour escalopes with this sauce. Serve with green onions (whole feathers). As a side dish, you can serve young beans, green peas or and / or potatoes. It's also good to have olives and fresh vegetables, cucumbers, tomatoes on the table. Wine should choose a dining room (for veal - red, for pork, pink or white).
Recipe for an escalope of pork in the oven
Ingredients:
- escalopes of pork tenderloin - 1-2 pcs. per serving;
- yogurt unsweetened or cream - 200 ml;
- mixture of spices (hops-suneli or curry);
- creamy butter.
Preparation
Escalopes slightly beat off and marinate in yogurt or cream flavored with spices.
Gently wipe the escalopes with a napkin, spread on a greased baking sheet. Bake for 40 minutes. It will be good to serve some hot garlic sauce and side dishes.
Turkey's escalope - recipe
Ingredients:
- escalopes from turkey fillet - 1-2 pcs. per serving;
- Chicken egg - 2 pcs .;
- flour corn in a mixture with wheat (1: 1) - 1-2 tbsp. spoons;
- black and red pepper - ground;
- butter, melted butter or fat (pork, chicken).
Preparation
We beat off the escalopes.
We cook eggs and flour with the addition of 1-2 tbsp. spoons of water, beer or corn whiskey. Season with spices.
Well we warm up the fat in a frying pan. We drop the escalopes in batter and fry. When the escalope is fried to the desired degree on both sides, the fire is reduced and another 15 minutes under the lid. Ready-made escalopes can be served with hominy or potatoes. To this dish, a hot tomato sauce or salsa with avocado and chili is suitable.
