Salad with prunes and chicken breast

Chicken meat, like most other types of meat, is perfectly combined with various fruits, both fresh and dried. A classic combination is prunes and chicken, not infrequently found in hot dishes or snacks. A popular example of the latter is a salad with prunes and chicken breast, the subtleties of which we decided to devote this material.

Salad with prunes, cucumber and chicken breast layers

In this version of the dish, there are two accents with a pronounced sweetness: the first is prunes, and the second is caramelized onion with mushrooms, which is prepared much more simply than it may seem.

Let's start with caramelized onion, cooking which takes the most time. Divide the bulb into half-rings of medium thickness and let it sit on a low heat with a drop of oil for about 20 minutes. During this time the onions will acquire a caramel shade, a viscous consistency and a sweetish taste. If necessary, pour a little water if the onion starts to stick to the bottom of the dishes. Add the mushrooms to the onions and wait until all the moisture evaporates.

Boil the eggs hard, separate them, separate the protein and yolk separately. Chicken also boil and disassemble into small fibers. Mix the bird with mayonnaise. Cut prunes into small pieces, and cucumber into the most thin circles.

In the culinary ring lay a layer of prunes, chicken over it, fungi with onions, a thin layer of mayonnaise, protein, again sauce and yolk. The surface of the salad is decorated with thin circles of cucumber.
