Cooking hurcho, like any other first course, begins with broth. For such a rich dish as harcho, the broth should be quite fat, so take veal with fat, cut into large cubes and pour water (about one and a half liters). Leave the meat to boil for a couple of hours, while removing the foam from time to time. Take a ladle of hot broth and pour saffron on them for 10 minutes, then strain the solution and pour into a saucepan. Nuts twist with a meat grinder and combine the resulting paste with chopped garlic teeth, hot pepper and chopped cilantro. Season the soup with a delicious nutty paste and pour over the plates immediately - the jar is served very hot.

Rice soup kharcho at home

Cut one of the bulbs in half and send to the pan along with large pieces of beef - this is the basis of our broth, which should be filled with cold water (a couple of liters will be enough) and put on fire for an hour and a half.

While the broth is on fire, we prepare the roast from the remaining onion. When the pieces catch a blush, we put garlic, tkemali and tomato paste on them. Dilute everything with a ladle of broth.
