Salad "Autumn" with mushrooms and corn

So, to prepare a festive salad "Autumn" prepare all the ingredients first. For this, the champignons are washed, wiped with a towel, cleaned and cut into large plates. Fry mushrooms in vegetable oil until soft, slightly salted to taste. Chicken fillet in a pan, pour water and boil until cooked. Then remove, cool and disassemble the fibers.

Eggs with carrots, too, boil, cool, clean and crush small cubes. Marinated cucumbers cut into strips. With canned corn, gently drain all the liquid, onions are cleaned and shredded cubes. Garlic squeezed through the press, mixed with mayonnaise and chopped herbs. After that, we shift all the prepared ingredients into a deep salad bowl, season with garlic sauce and mix. The entire surface of the salad is decorated with corn grains, mushrooms and we clean for a couple of hours in the refrigerator.

This original salad will perfectly decorate any table. It can be laid out in layers, or simply mix all the ingredients in a bowl.

So, boiled chicken meat, cucumbers and pickled mushrooms are cut into small cubes. Cheese is rubbed on a small grater, and eggs are boiled, cleaned and three on a large grater. Green grass shredded. Garlic is cleaned, squeezed through the press and mixed with mayonnaise. Lay out the salad layers from the bottom up: first put the mushrooms, then the chicken, then cucumber, cheese, eggs and greens. We cover each layer with mayonnaise with garlic, if desired, add salt and pepper a dish.

So, let's start the preparation of the salad with the preparation of eggplant: it should be done about a day. Eggplant boil, cut off the "tail" and cook in slightly salted water for 5 minutes. Then lightly pierce it with a fork or knife. It should be soft, but not digested. After cooking, carefully take out the vegetable, dry it and put it under pressure for the whole night to completely remove the bitterness from it.

The next day we clean the eggplant from the skin and cut into small cubes. The rest of the vegetables - Bulgarian pepper, tomato, onion and cucumber, grind, and carrots rub on a coarse grater. We combine all the ingredients in a salad bowl, season with vegetable oil, add a pinch of salt and pepper to taste. All carefully mix and remove the prepared salad for several hours in the refrigerator.

Salad "Autumn" from fresh cabbage
