Duck baked with buckwheat
Ingredients:
- duck - 2 kg;
- spice;
- laurel leaf.
For filling:
- buckwheat - 150 g;
- chicken liver and duck giblets - 300 g;
- fresh champignons - 250 g;
- bulb - 2 pieces;
- vegetable oil - 2 tbsp. spoons.
Preparation
We wash the duck, gut and rub it outside and inside with salt, pepper. Then wrap the bird in a bag and remove it for 30 minutes in the refrigerator. This time while we are preparing the filling: Buckwheat porridge boil in a 1: 2 ratio, fill the groats with cold water, add it and put it on the fire. After that, we remove the pan with the finished porridge from the plate, wrap it with a towel and let it reach. We clean the bulb, shred, and mushrooms are processed and cut into slices. Chicken liver and duck giblets chop and set aside.
On the vegetable oil, let's pass the onion to rudeness, add mushrooms, salt and fry until all the liquid has evaporated. In another clean frying pan fry the liver and duck offal. Next, we mix buckwheat with mushrooms and liver, throw the laurel leaf and season it with spices. Now gently pull the skin from the neck of the duck and sew the hole with a strong thread.
Using a spoon, we stuff the bird with the prepared mixture and sew a hole from the bottom. We place the bird in the culinary sleeve, tie it from two sides and put it on a baking tray. Bake the dish in a well-heated oven for 2 hours at 170 degrees. 30 minutes before the end, cut the package and let the bird lightly brown. Carefully remove all the threads and serve the duck, baked in the sleeve, to the table.
The recipe for baked duck in the oven
Ingredients:
- duck carcass - 2 kg;
- garlic - 1 piece;
- potatoes - 1 kg;
- spice;
- mayonnaise;
- vegetable oil;
- fresh greens - for decoration.
Preparation
The carcass of the duck is washed and dried with a paper towel. Next, we turn to the preparation of marinade: we clean garlic, squeeze through the press, add mayonnaise, a little salt, pepper and mix. Peel potatoes and cut into thin slices. Then we rub the duck from all sides with the prepared sharp mixture and spread it on a baking tray, smeared with oil.
Add the potatoes to the bird, add some salt to it and tighten the baking tray with food foil. We send the dish to a preheated oven and bake at 200 degrees for about 1 hour. After that, carefully remove the foil and cook for another 20 minutes, until red. We serve a baked duck with potatoes on the table, decorating with fresh parsley greens.
