The recipe for cooking echpochmaka fairly simple. Take the cooled butter, cut into pieces and knead with wheat flour until a homogeneous coarse crumb is obtained.

In a separate bowl, whisk a good egg, adding just a little salt. Pour kefir and put a little soda, not slaked with vinegar. The resulting mixture is added to the flour with butter and knead the dough. It should turn plastic and soft, but do not stick. We put the finished dough for half an hour in the refrigerator. And by this time we are preparing the filling.

To do this, we take any meat, best beef, and cut it together with potatoes into small cubes. Onions are cleaned and rubbed on a large grater. We mix everything, salt, pepper to taste! Then we shift cooked echpochmaki to a baking sheet, grease with beaten egg and send for 30 minutes in a preheated oven to 200 degrees. After half an hour we get pies and put a small piece of butter in each hole. We send it to the oven and bake for 30 more minutes!
