Rice with pork

Rice and pork meat - products quite harmoniously combined. Different recipes of dishes with the indispensable presence of pork and rice are found in the culinary traditions of many countries and peoples. Of course, some other ingredients are required, they are different in specific dishes, they can be vegetables, sometimes fruits (including dried fruit), fragrant herbs and various spices.

You can cook rice with pork and vegetables in a very different way, for example, an uncomplicated recipe from the general Balkan culinary traditions.

In a separate bowl, pour the rice with boiling water, after 10 minutes, drain the water and rinse the rice thoroughly with cold running water. Cooking is best in a cauldron or a thick-walled saucepan, and a deep frying pan will come down.

Fry in shallowly chopped onion with vegetable oil until medium shade changes. Add meat, cut into small pieces (as a pilaf or slightly larger). Reduce the heat and simmer all together under the lid for about 30 minutes, stirring occasionally and adding water, if necessary. Add sweet pepper, tomato paste, paprika, spices and washed rice. Slightly greasy. Fill all with water so that it overlaps by 1-1.5 fingers. Mix only once, no more.

Cover the lid and cook on low heat until ready, that is, until the liquid evaporates (for this purpose it is good to make in the rice grooves and place in them pieces of garlic, just as when cooking pilaf). Already ready pork with rice can be held in a hot oven without a lid for another 20 minutes at the lowest temperature - so the taste of this dish will become even more interesting. Serve with greens.

If you exclude from the composition of this dish tomato paste (or, perhaps, red sweet pepper, however, pepper is optional), you can add pieces of fresh quince and various dried fruits little by little (raisins, prunes , dried apricots). Dried fruits, of course, should first steamed in boiling water and remove prunes from the prunes. Rice with pork, quince and dried fruits, too, is very delicious.

From drinks to these dishes you can serve light wines (table or strong), rakia or palinka.
