Fresh tomato sauce for spaghetti

In a frying pan pour 4-5 tablespoons of olive oil and fry the chopped garlic on it until the latter begins to change color. We add fresh basil and tomatoes to the frying pan. Before the introduction of tomatoes, the fruit must be cut crosswise and scalded, remove the peel. Tomatoes are pressed with a wooden spoon in a frying pan. Salt and pepper our future sauce. As soon as the mass in the frying pan starts to actively boil, filter it through a sieve into a separate bowl, grinding tomatoes with the same wooden spoon. Return the homogeneous sauce back into the frying pan and evaporate until thickened for 5-7 minutes.

The ready sauce for macaroni from a tomato can be consumed immediately, but you can freeze and reheat as needed.

Pizza sauce from a tomato

Grind the onion and fry it in olive oil until golden, add garlic at the end of the frying and let it run off. As soon as the aroma of garlic spreads around the kitchen, it's time to add tomatoes, they must first be peeled and kneaded directly in a frying pan using a wooden spoon. Once the sauce becomes more homogeneous, it's time to season it: add salt, pepper, herbs and some honey.

Simmer the pizza sauce from the tomato and garlic until thickened over medium heat. If you want a homogeneous product in the end, then wipe the tomatoes through a sieve, and then repeatedly evaporate excess moisture. Hot sauce sprinkle with grated "Parmesan", carefully mix everything and serve with pasta or pizza.

Tomato sauce with this recipe can be prepared for the winter, just pour the tomato sauce over the previously sterilized jars, cover, keep in the bath for 10-15 minutes and roll.
