Collected lime flowers without leaves are poured cold water, bring to a boil, then reduce the fire and languish for about 20 minutes. Remove from the heat and let it brew for another 20 minutes. Then remove the inflorescences and squeeze. In the resulting broth, which will become viscous, pour sugar. Cook on low heat for 40 minutes. After that, add a twisted half-leavened meat grinder. (Instead of lemon, you can add a teaspoon of citric acid). We stir everything and again give it to boil, stirring the composition. Turn off the fire, let it cool down, and pour it over the cans. Before making honey from a linden, cut off all the leaves so that only whole flowers are left. Densely we compact inflorescences in a jar. The resulting number of colors are transferred to a pan, filled with water and covered with a lid. Bring to a boil and simmer for at least 20 minutes. Remove from the fire, insist a little and filter - get a kissel-like mass. Add sugar, take it for an hour and a half, stirring occasionally. We remove the foam to make the honey transparent. Then add half a lemon (or citric acid) and cook for another 15-20 minutes. We collect pieces of lemon or filter the composition. We pour out the syrup over the cans. Such delicious honey can be added to tea or simply eat with a spoon.
