Turkey with pineapple in the oven

Meat of turkey contains a maximum of animal protein and a minimum of fat, it is one of the best meat products for human nutrition. You can cook turkey in different ways, many interesting recipes are known.

How best to use the whole carcass?

If on weekdays you bought a whole turkey, it makes sense to cook several dishes from different parts of the carcass. Wings are good for shurpa and holodtsa, shanks and hips - for meat stew and other stews, back, neck, head, heart - the basis for broths, liver fry well with eggs for breakfast. A turkey breast can be baked in the oven, for example, under pineapple (more precisely, under pineapple spicy sauce). This dish is well prepared for a Saturday dinner or Sunday lunch. Breasts are often sold separately.

Breast turkey cut from the pits, you can cut the fillets into two parts along the fibers, the skin is not removed (well, unless unless you are preparing a dietary dish).

We divide the pineapple and cut it into beautiful slices. Some of the pineapple and edible remnants after cutting will be put in a blender together with the purified garlic and bring to a puree state, we will pour a spoonful of tequila and lemon juice, season with pounded hot pepper, cloves and coriander, a little bit - let it take 15 minutes. Let's strain the sauce through frequent a strainer, add 2-3 tablespoons of hot melted butter and - it is ready.

Lubricate with butter or lard fat baking tray or refractory mold (that dish in which we will bake turkey breast).

With the help of a brush, we will abundantly smear turkey breast with sauce and lay it on a baking tray. In principle, you can wrap the meat in foil.

We will bake the breast in a preheated oven for 1 hour. Approximately in the middle of the process, once again we will saute meat with sauce. If baked in foil or in a deep form with a lid, then 20 minutes before cooking, remove the lid (or unfold the foil) and then bake the meat open. Thanks to this method we will get a crispy ruddy crust.

Pineapple slices it is better not to bake, this fruit is much tastier and more useful in its natural form and in thermal processing does not need.

We put the prepared baked turkey breast on a serving dish and sprinkle with grated cheese (it also does not need to be baked, let only slightly melted). Beautifully decorate the meat with slices of pineapple and twigs of greenery. Before serving, we will wait about 10 minutes. As a side dish, rice, polenta, baked pumpkin and fresh fruit (exotic ones: citrus fruits, kiwi, bananas, for example) will serve well. Of the alcoholic beverages, authentic American (rum, cachasha, tequila) or table light wines are most suitable. It will also be good to serve tortillas instead of bread and finish the meal with fragrant strong mate.
