Balyk from the catfish

Before you make a balyk from a catfish, you need to choose a good fish, that's what the final result depends on. The catfish should be fresh and the thickest, from what you can only find.

Take the selected carcass, remove the skin from it, remove the peritoneum and ribs. You should have only the fillet for salting. Cut it into pieces. At the bottom of the dishes, in which you will salt fish (it is better to take a glass or enamel utensils), pour the salt, lay the fillets on top, then salt again, and again the fillets. Strand the layers this way until the fish is finished.

Cover the dishes with a lid and put into the refrigerator for 3 days. Then remove the fish, rinse and hang in a well-ventilated place. Leave it for 3-4 days, but make sure that the fillet is not dried out. When the fish has waxed, wrap it in foil and let it lie in a cool place for 3 days.

After that, cut the fillet into thin slices and treat yourself.

Make a catfish so that one fillet is left. Slice it in pieces, 5-6 cm thick and rinse. Fold the fillet down into the marinating dish, so that the pieces fit tightly together and top with a large salt. If necessary, lay a second layer of fish on top and sprinkle with salt.

Put the container for 2 days in the fridge, then remove the fish, rinse and hang the pieces in a cool place for a few days. After this time, your balyk will be ready.
