Let's cut the leeks in thin circles and save in a frying pan in oil. Add the sliced ​​tomatoes, salted. Let's add wine, add the spices, season with hot pepper and protushim to reduce the amount of liquid by 2/3. We remove the tips of the bean pods and cut each into 3-4 parts. We put in a pan together with the washed and cut potatoes (with a peel). Fill with water, bring to a boil, reduce heat and cook for 8-10 minutes. We disassemble cabbage on kocheshki (as it is possible more finely). Pepper is cut into short straws. We put in a saucepan and cook for another 5-8 minutes on low heat. Add the contents of the pan. Boil 1-2 minutes. Ready-made vegetarian soup of cauliflower is poured into soup cups or plates and seasoned with chopped herbs and chopped garlic.

Ready soup can be turned into vegetable soup with a blender.

Those who do not want to eat vegetarian dishes, you can offer 4-5 minutes before the end of cooking to put in meat soup meatballs from low-fat minced meat (preferably, of course, home cooking). Meatballs form no more than a walnut, then they are well cooked in 4-6 minutes. Or you can boil the soup on a meat broth followed by the addition of small pieces of boiled meat. It is best to use chicken, beef, veal, turkey.

Cauliflower boil separately in a pot of water, salt, cabbage cool and disassemble into small kocheshki. Green onions are washed, dried with a clean napkin and crushed with a knife. We will cut the bread into small pieces and dry it in the oven on a baking sheet. In each of the soup cups or plates we put on a portion of boiled cauliflower. Top out the crackers. Abundantly and evenly sprinkle chopped green onions and cheese, grated on a medium grater.

We use ready-made meat broth pre-cooked according to your taste - with a laurel, pepper-peas, a nail and an onion. Of course, it is better to filter it. Gently pour the hot broth prepared contents in the soup cups. Season the cheese soup with a small piece of butter and lightly sprinkle with ground black pepper.
