Mayonnaise without eggs at home

As we know, mayonnaise in the classical version is a sauce made from olive oil and egg yolks with the addition of ready-made mustard.

Currently, mayonnaise is one of the most popular sauces in the post-Soviet territory. For certain reasons, any dish with mayonnaise seems to the majority of people tastier. In a hurry to figure out some salad: any ingredients with mayonnaise are easily combined in one dish.

However, most of the mayonnaise offered by the industry contain a lot of unused chemical additives - these substances prolong the shelf life of mayonnaise (various preservatives, emulsifiers, flavor enhancers and others like that).

Meanwhile, to cook a delicious mayonnaise at home is quite easy even without eggs, we'll tell you how to make it. In this version, this sauce is very good for lean days, and also suitable for certain types of dietary and vegetarian food.

Mayonnaise without eggs at home with a blender for 5 minutes - recipe

Since we cook without eggs, they must be replaced by some other product (or several). Some people think that milk is the most suitable for this, however, in this case it is rather closer to the recipe of the famous Béchamel sauce . Let's do it differently: mix cream or creamy yogurt with sweet white wine. Our sauce will turn out very refined.

Mix the blender or mixer with olive oil, cream or yogurt, wine, mustard and lemon juice. Add salt to taste. Consistency is regulated by the addition of starch (it should not be much). You can add 1 teaspoon of powdered sugar to the sauce, this ingredient will give the sauce the necessary viscosity, in some way, replacing the eggs.

This recipe can be taken as a basis and add to the mayonnaise various ground spices (coriander, fennel, nutmeg, cumin, cloves, fragrant and red hot pepper and others). It will also be superfluous to add garlic that has been squeezed into such homemade mayonnaise.
