Truffle cake

Everyone who at least once in his life tried truffle candy , or truffle cake, became their admirer and dreamed of learning how to cook this masterpiece. We decided to help you and tell you how to make a truffle cake at home.

Truffle cake - recipe

For a biscuit, take 4 eggs and separate the proteins from the yolks. Whisk the last with 80 g of sugar, whisk the proteins separately in a tight foam, and then add 40 g of sugar and beat well. Combine the proteins with yolks, pour the sifted flour and starch to them, mix again. Put the dough in a greased form and bake at 200 degrees 25-30 minutes. Allow the biscuit to stand for 8-10 hours.

For syrup pour 100 g of sugar with water, boil and cool. Now make the cream: combine 1 egg and milk, strain, add 160 g of sugar and cook on medium heat. Cook until thick, stirring constantly. After this, pour into a bowl and allow to cool, sometimes stirring. Whisk the butter with vanilla sugar, and, whilst continuing to beat, add to them a tablespoon of egg syrup.

When using half, pour the rest of the cocoa, and again add to the cream on a spoon. At the end pour in cognac. Biscuit cut into two cakes, soak with sugar syrup, apply one cream to the cream, put the other on top and cover the whole cake with cream.

Truffle cake with cherry filling

If you want to slightly change the recipe of the cake, then it can be made with a filling of cherries. To do this, prepare the cakes and cream as in one of the above recipes, and the syrup and filling - according to this recipe.

Preparation

Vanilla sugar, cherry and water in a saucepan, bring to a boil, then remove the cherry. Starch dilute in a small amount of warm water and pour into the resulting syrup. Send the cherry back and let it cool. For a syrup just mix the cherry juice and tincture.

Now proceed to assemble the cake: soak the cake with syrup, apply cream, top with cherry filling. Do this several times (depending on how many cakes you have got) and put the cake for a couple of hours in the refrigerator.

Chocolate cake "Truffle"

Preparation

Whip the proteins with citric acid and 1/3 sugar until firm peaks. Combine the yolks with the remains of sugar and whisk until the weight becomes light. Do not stop whipping, pour the cocoa dissolved in hot water. Then, stir in the yolk mass of the flour, and gently add the proteins in a few turns.

Divide the finished dough into approximately 3 parts and bake each with a separate cake in a rounded, parchment paper, in an oven heated to 190 degrees. Let them cool and gently separate from the paper.

Connect the water with sugar, bring to a boil, pour in the liquor, mix everything and turn it off. For the cream, bring the cream almost to the boil, and then fill them with grated chocolate. Stir the mixture until the chocolate is completely dissolved. Then put in the fridge for at least a couple of hours. Before lubricating the cake, whip the cream until firm peaks.

Each cake is moistened with syrup, sprinkle with cream and chocolate, then cover the cake on top and on the sides. Decorate with sweets and treat guests.
