Blackberry preserves

We wash blackberries. It is most convenient to lay berries in a colander and gently dip it into a container of cold water (rather than rinse under a jet), and then remove - so the berries remain intact. We let the water drain, we sort out, we remove the waste berries and sepals. Berries in an enamel saucepan are covered with sugar and leave for 8-10 hours in a cool place, so that the berries well let the juice. We put the saucepan on the fire, bring it to a boil, reduce the fire to the smallest, and, gently stirring, cook for about 5 minutes, no more.

Banks should be thoroughly washed and sterilized. We put jam in the dry from the inside (this is important) banks and roll sterilized lids or sealed in another way. Capron covers are also suitable if you store jam in rooms with a low temperature (closed verandah, glazed balcony, pantry). If rolled up - turn the jars and wrap up with an old blanket and leave for a day.

Jam from raspberries and blackberries is prepared exactly the same way (see above).

In general, the blackberry is perfectly preserved in a frozen form. Modern refrigerators can cope with the function of shock freezing products and solve such problems well.
