Dried pears - recipe

Dried pears are an inexpressibly delicious treat, which will please both children and adults alike. It can be used as a dessert for tea or used as a filler for baking .

For drying, any ripe but elastic fruit will do. We wash them well in cold water, wipe them dry, cut them into four lobules and extract the stem and core with the seeds. We put quarts of pears in an enameled container, pouring every layer of sugar. The amount of sugar can vary depending on the sweetness of the fruit. From above put the load and leave the structure for ten to twelve hours at room temperature.

Then merge the allocated juice, pears spread on parchment paper or foil covered with a baking sheet and determine in preheated to 65 degrees oven, leaving the door slightly ajar. We sustain the fruits to the desired degree of drying and put them in dry, sterile cans for storage.

We will also process the remaining juice. Warm it to a boil, cook a few minutes, pour over the sterile jars and roll.

Ripe, dense pears washed in cold water, cut in half and get rid of the core. We prick them in several places and put them in an enameled container, pouring a layer of sugar. We leave the container with pears and sugar at room temperature for about one and a half days to isolate the juice.

Then the juice is drained, heated to a boil and we reduce the fire to the very minimum. We lower in the received syrup pear halves and we maintain approximately seven-ten minutes. Fruits should be soaked with syrup and soften a little, but at the same time stay a little damp.

Next, take the halves of the pears into a colander, let the syrup flow well, and the fruits cool to a warm state.

We spread them on the pallet of the dryer and stand at a temperature of 60 degrees to the desired degree of drying. On average this takes twelve to fourteen hours. But it all depends on grades and juiciness of pears, and also on their size.

How to store dried pears?

Dried pears, cooked according to the first recipe, are stored for a long time in hermetic sterile jars in a cool place. You can safely use this preform before the next harvest.

Billet from the second recipe is more capricious and for long-term storage requires freezing or staying in a refrigerator in a tightly closed container. Although, as a rule, long such jerky pears do not lie and thanks to their delicious taste very quickly eaten.
