First we prepare the sauce. Mix the juice of lemon or lime with honey and soy sauce in approximately equal proportions (taste it). Add the chopped garlic and season with hot red pepper. Let's stand for about 5 minutes and strain through a strainer (necessary to remove pieces of garlic, otherwise they will burn).

Chicken fillet without skin cut into thin, short strips, peeled onions and fennel fruit - quarter rings or half rings, sweet pepper - short straw.

Cook conveniently in a wok or in a deep frying pan (better cast iron without coatings). Heat the frying pan and heat the fat, add sesame oil. Fry pieces of meat, onions and fennel simultaneously on high heat, until the shade changes (minutes 2-5), while constantly shaking the frying pan by the handle and actively manipulating the scapula. Add the sweet pepper and fry all together for another 3-5 minutes, after which the fire is reduced and poured into the sauce. Put the chicken in the sauce for 8-15 minutes, shaking and stirring occasionally.

Serve with rice or noodles . To this dish, it is better to choose authentic Asian drinks: rice wine, mirin, soya, fruit wines.

We must understand that honey when heated from a useful product turns into a sufficiently harmful, because its components are destroyed and modified.

Therefore, it is better to prepare the sauce first without honey, fry the chicken and put it out, in sauce, and add the honey, when it is slightly cooled, directly over the feed. Or pour the prepared fried with vegetables chicken sauce.

Baked chicken in orange-ginger-honey sauce

Breast can be cut into 4 parts, and the whole leg - 2-3 parts each. We need a deep baking tray or a ceramic mold, such that pieces of meat are laid compactly. Rinse the shape with water and lay the pieces of chicken skin up. We place the pan in the oven and bake the chicken for 35-40 minutes at a temperature of about 180-200 degrees Celsius.

Prepare the sauce. We rub the peeled ginger root on a grater or chop it very finely. Mix freshly squeezed orange juice with honey. Add the chopped garlic and orange juice. It's good to add some tamarind paste. Season the sauce with hot red pepper. Leave to insist.

When the chicken was baked almost to the ready and slightly browned (that is, it took about 40 minutes), strain the sauce. We extend the grate on which the pan is placed and distribute evenly, pour the chicken sauce. Bake chicken with sauce for another 10-20 minutes with minimal heat. Serve with greens, with rice and / or young green beans.
