Take into account the fact that such a billet is a salvation for all sweeties, since it contains almost twice as much sugar as the berries themselves. If you are going to store jars with billets in a cool, then take 1.5 parts of sugar for a part of the berries, at room temperature on the part of the currant will have to use two parts of sugar.

Before preparing the currant, rubbed with sugar, prepare the berries, combining, rinsing and drying them. Pour the berries into enamel or glassware, as the use of metal containers leads to the inevitable destruction of vitamin C. Pour the berries with sugar and thoroughly mash with a wooden crush, making sure that each of the berries is well rubbed.

To avoid fermentation of berries during storage and dissolve all sugar crystals, the future billet is left for 2-3 days at room temperature, covered with gauze and stirring from time to time. During this time, fresh currants, wiped with sugar, will acquire the consistency of jam. Ready mass spread on pre-sterilized banks, not reaching a couple of centimeters to the neck. The remaining space to the neck of the canister is filled with sugar, then close the jars with scalded plastic covers.

For one serving of currants, take a half serving of sugar. Rice the berries, peel off the tails and rub with a wooden pestle. If you harvest berries in a large volume, then it is reasonable to use a meat grinder or a blender. When the currant will be frayed, it is mixed with sugar, the dishes are covered with gauze and left for a day. Periodically, the workpiece will need to be mixed.

After a while, sterilize the jars in any convenient way. Distribute jam in containers, not reaching the neck of a couple of centimeters. All the remaining space is filled with sugar (a layer of sugar will take about a couple of centimeters). Cover the jars with jam with scalded lids and leave them for storage. You can store such a workpiece even at room temperature, because the sugar crust prevents air from entering the container, and, consequently, also the formation of mold.

Measure out berries and sugar, taking two servings of sugar for one serving of currant. Pour the berries into the bowl of the blender, without fail having thoroughly washed them and cleared from the peduncles. Blend the washed currant, and mix the resulting puree with sugar. To increase the benefits and aroma of the billet, add to it the juice of one orange and a citrus peel.

Combining all the ingredients together, leave the workpiece under the gauze for a couple of hours, waiting for the complete dissolution of the crystals. Then spread the prepared jam over the sterilized jars and close the lids. Keep in the cold.

If you decide to leave the jam at room temperature, then pre-fill its surface with a couple of centimeters of granulated sugar.
