How to fry eggplant with garlic? So, first, my vegetables, wipe and cut into thin circles. After that, carefully immerse them in a saucepan with salted water and leave in this state for 20 minutes, and then squeeze them. In a frying pan, we warm up the oil, we spread a few crushed garlic cloves into it, we pass a couple of minutes and remove it from the frying pan. On the resulting aromatic garlic butter, fry from both sides of the eggplant until blanch. Then put them on a clean towel, and before serving, sprinkle with chopped garlic and fresh dill.
