How to make cherry liquor?

Pouring cherry is a dish beloved by ladies. A very fragrant and intense drink first of all conquers sensitive ladies' hearts, and only then men's. Anyway, after you try the cherry liqueur according to our recipes, you will have to store this drink in large quantities.

The recipe for a cherry liqueur

Let's start with the recipe for natural, that is, not requiring the addition of alcohol, or other flammable liquids, as well as yeast starter cultures. Berries and sugar are all that we need.

First we will understand with a cherry, which we will use for cooking. Cherry, preferably, should be wild, as wild berry is more fragrant. If the wild berries are not present - do not be sad and use that is. Bones of berries should not be taken, especially those who appreciate in alcohol a slight bitterness.

Berries of cherries are not mine, otherwise fermentation, and hence the drink, will not work, because the natural yeast on the surface of the berries will disappear.

Cherry knead in any convenient container and fall asleep with sugar. The resulting gruel is poured into glass bottles with a capacity of about 10 liters (at the same time, the berry mass should exceed 2/3 of the total volume). The neck of the dishes, in which our drink will be prepared, is covered with 3 layers of gauze and put on fermentation. After a couple of days, when the first signs of fermentation appear, the bottle is put on the water seal, that is, cover the neck with a lid with a hose, the other end of which is immersed in water. At the end of fermentation, when the bubbles of carbon dioxide cease to exit, the beverage is drained without sediment into another container. This procedure should be repeated several times to get rid of the sediment completely. Cherry liqueur prepared at home is ready for use. If there is residual fermentation in the bottle, just open the lid slightly to allow excess carbon dioxide to escape.

Cherry pouring on vodka

Cherry pouring can also be prepared on vodka, or alcohol. This recipe takes much less time, but loses by taste qualities to the previous one.

Cherries my and straight with pits pour vodka. We leave berries in the cool for 2 weeks, shaking occasionally. after which the vodka component of the liqueur is separated from the berries and clogged with a lid, and the berries are shaken with sugar and left for another 2 weeks, also shaking periodically. After the passage of time, the cherry syrup from the jars is mixed with the alcohol part, and the berries are filled with water and leave for another 2 weeks. The resulting solution is mixed with the liquid and enjoys a ready-made drink.
