Ice cream from milk

One of the most wonderful delicacies, which we are often little parents spoiled is a delicious, cold ice cream. We offer you to please your children with real home-made ice-cream, prepared from good milk, according to recipes, which detail how to properly make it.

How to make ice cream "Plombir" from milk and cream?

Homemade, boiled, but already chilled milk is combined with fresh egg yolks and small sugar. We split everything with a handful of whisk and move it into a metal container, which we then put on the hot plate with a weak fire. Constantly stirring this mixture, boil it to a consistency similar to condensed milk. We remove everything from the plate and without stopping stirring with a whisk or a spoon we cool it to the room temperature.

In a separate bowl with high sides, pour out very well-cooled fatty cream and beat them with a conventional electric mixer until the air mass is obtained. This creamy mass is carefully transferred to a container with milk-egg syrup, and carefully mixing them together. We move everything into a wide glass or plastic container, which we then put into the freezer compartment for 45-50 minutes. Then we remove the ice cream from the chamber and mix it, again we send it back for the same amount of time. Then we repeat the same procedure, but we set the "Plombier" to freeze for 3.5 hours.

How to make homemade ice cream from milk and sugar without cream?

Fat, good milk poured into a saucepan with a thick bottom, add to it half of the sugar, vanilla sugar and putting on the plate bring to the boiling state, while always stirring. We put everything aside for cooling.

We combine the fresh egg yolks with half the remaining sugar and beat them with a mixer until the foam state. Pour out the second half of all the remaining sugar to the proteins and do with them, too, as with the yolks to get a stable air mass.

The cooled milk syrup is combined with a mass of yolks and putting everything on the fire, stirring we bring to a small compaction of this mass. Again, we set aside the saucepan until it cools, and afterwards we put in the lush proteins here first with a spoon and then with a mixer. We shift the resulting ice cream base into a large vessel and place it in the freezer. We take ice cream from milk and granulated sugar for stirring twice every 50 minutes, after which we leave it in the freezer for 6.5 hours.

Recipe for ice cream from milk and strawberries

In a large bowl of the blender we place the yolks of chicken eggs, with the addition of sugar in them and drive them into a homogeneous state. Strawberry berries are thoroughly washed and, cutting each into 4 lobules we send after the yolks and grind until all the fruit pieces are broken up in mass. Now put the homemade sour cream here and beat it up to a small increase in volume. Milk before the boil and cool to a cold state in the refrigerator, and after pouring into the total mass of the blender and thoroughly whipped the ice cream.

We shift the milk and strawberry mass into a wide container, which can be put in the freezer. After 1 hour and 20 minutes, take out the container and whisk the ice cream with a mixer at low speed and then freeze again. We repeat the whipping process again after 1 hour and 20 minutes, and then put it back for 5-6 hours.
