Rukola is an amazing plant with a slight bitterness, adding a pleasant taste note to any dish. It is thanks to its unusual taste that the rucola has become increasingly used in cooking recently. Counters of our supermarkets, this herb is also not spared, so that everyone can prepare salads with his participation at home, and recipes we happily share.
Salad with rucola, cherry tomatoes and "Mozzarella"
Ingredients:
For salad:
- arugula - 170 g;
- cherry tomatoes - 300 g;
- "Mozzarella" - 120 g.
For refueling:
- garlic - 2 cloves;
- basil - 1 small bunch;
- olive oil - 3/4 items;
- lemon juice - 3 tbsp. spoons;
- Dijon Goths - 1 tbsp. a spoon;
- salt pepper.
Preparation
We cut the mozzarella into cubes, we divide cherry tomatoes into halves. Mix all the ingredients in a deep salad bowl.
We prepare the dressing: chop the garlic with a blender, add the basil leaves and repeat the procedure. Ready mashed potatoes with olive oil, lemon juice, mustard and whisk once more until homogeneity. Solim and pepper refill to taste.
We serve the salad to the table immediately, pour the dressing and eat it with toasted toast.
Spicy salad with shrimps, dried tomatoes and rucola
Salad on the below-presented recipe can be eaten not only independently, but also mixed with freshly prepared pasta, which will absorb the pleasant acuity and sourness of the dish.
Ingredients:
- olive oil - 7 tbsp. spoons;
- cayenne pepper - 1/8 tsp.
- Dried oregano - 1/2 tsp;
- salt, pepper - to taste;
- royal prawns - 6 pieces;
- lemon juice - 2 tbsp. spoons;
- young arugula - 140 g;
- walnuts - 2 tbsp. spoons;
- shallot (crushed) - 2 tbsp. spoons;
- avocados - 1 piece;
- dried cherry tomatoes - 1 handful;
- basil leaves - 6-8 pieces;
- lime juice - 2 tsp.
Preparation
In a small bowl, mix 2 tablespoons of olive oil, cayenne pepper, oregano, salt and black pepper. Add prawns and mix, leave to marinate for 10 minutes.
Separately mix lemon juice and 4 tablespoons oil. We put it aside.
The remaining tablespoon of oil is heated in a frying pan and fry on it with sharp pickled prawns for 2 minutes on each side, or so that the shrimps blush. Finished prawns watered with lime juice.
In the salad bowl we connect the leaves of young arugula, thin shallots, dried cherry, nuts and basil. Cut the avocado pulp with strips and also send it to the salad bowl. We fill the salad with a mixture of butter and lemon juice, salt and pepper to taste, mix thoroughly. Serve the salad immediately, laying over the toasted prawns.
Salad with rocket salad, tomato and chicken
Ingredients:
- olive oil - 3 tbsp. spoons;
- lemon peel - 1 teaspoon;
- lemon juice - 1 tbsp. a spoon;
- chicken fillet - 120 g;
- salt pepper;
- cherry tomatoes - 10 pieces;
- rucola - 1 bundle;
- wine vinegar - 1 teaspoon;
- Dijon mustard - 1/2 tsp;
- Provencal herbs - 1 teaspoon;
- garlic - 1 clove;
- olives - 3 tbsp. spoons.
Preparation
Mix the butter, zest and lemon juice. Chicken fillet is cleaned from the films and immersed in the marinade for 15-20 minutes. Marinated Meat
Frying pan with oil, heat and fry the chicken on it for 3 minutes on each side. We put the prepared chicken on a warm plate and cover it with foil.
Tomatoes are cut in half and mixed with rucola in a deep plate. In a separate bowl, whisk vinegar with mustard, herbs, garlic and garlic salt and pepper. We prepare the dressing with 2 tablespoons of oil.
Chicken cut and add to vegetables. We fill the salad with chicken and serve it to the table.
