Salad with rucola and tomatoes

Rukola is an amazing plant with a slight bitterness, adding a pleasant taste note to any dish. It is thanks to its unusual taste that the rucola has become increasingly used in cooking recently. We cut the mozzarella into cubes, we divide cherry tomatoes into halves. Mix all the ingredients in a deep salad bowl.

In a small bowl, mix 2 tablespoons of olive oil, cayenne pepper, oregano, salt and black pepper. Add prawns and mix, leave to marinate for 10 minutes.

Separately mix lemon juice and 4 tablespoons oil. We put it aside.

The remaining tablespoon of oil is heated in a frying pan and fry on it with sharp pickled prawns for 2 minutes on each side, or so that the shrimps blush. Finished prawns watered with lime juice.

In the salad bowl we connect the leaves of young arugula, thin shallots, dried cherry, nuts and basil. Cut the avocado pulp with strips and also send it to the salad bowl. We fill the salad with a mixture of butter and lemon juice, salt and pepper to taste, mix thoroughly. Serve the salad immediately, laying over the toasted prawns.
