A wonderful unusual dish - beets stuffed with vegetables. This recipe, definitely, will be of interest to vegetarians of different persuasions and fasting. Beets, which we will stuff, you can either boil and stuff with vegetables prepared in one way or another, or stuff raw beets with raw vegetables and bake, or bake beets and stuffed separately prepared vegetables.

First we prepare the filling. We will clean and cut finely onions and carrots. Slightly save the onions in a frying pan, then add the carrots and braise for 15 minutes to make the onion tastier, and the carrot has become saturated with fat (so it is better absorbed). Season with spices, slightly add and mix with cooked rice .

We will thoroughly wash the beetroot with cold water, cut off the tail and the remains of the leaves, clean it with a vegetable knife, cut each root in half and make a groove in each of the halves. Be careful, beet juice is a bright and fairly persistent natural color (the stains are normally removed with lemon juice or a solution of citric acid).

We have obtained "boats" from the beet halves, we put them into a fireproof form. We put in the "boats" stuffing with a spoon.

Round beets are better for stuffing whole: you need to cut the part on one side so that the fruit can be put into the mold, and on the other - make a groove for the filling. In this case, take small roots.

Bake beets in the form for about 40-60 minutes (preferably under the lid). We serve baked stuffed beets , decorated with herbs, with sauce sour-garlic or sour-garlic-nuts - it will be very tasty. To prepare sauces with nuts, they must be crushed as much as possible.

Before baking, still uncooked and uncut beets can boil for 10-20 minutes (then it will be softer), and only then cleaned, cut and stuffed. You can simply boil the beets before stuffing for 40 minutes, stuffing and not bake. This dish can be served with a salted herring.

Non-vegetarians and non-swimmers can modify the recipe to their own tastes and cook beets stuffed with vegetables, rice and veal. When you pass the onions and carrots (see above), add veal stuffing into the frying pan and blend all together, then mix with the boiled rice and stuff the prepared beets. Also, the egg can be included in the filling.
